Observation (CORRECTED DURING INSPECTION): Hand wash station in the sandwich making area was blocked by a large garbage bin at the start of inspection. The garbage bin was relocated to make the hand sink accessible but was returned in front of the hand wash station by the end of the inspection. This issue was noted on previous reports.
Corrective Action(s): Do not obstruct this hand wash station. If adequate hand wash stations are not available in this food preparation area, then food handling will not be permitted in this area. This food handling area has not be formally approved (ie. no floor plan submission).

Observation: Noted foods in the walk in cooler downstairs stored on the walk in cooler floor.
Corrective Action(s): Do not store foods on the floor. Keep all foods stored minimum 4 inches off the floor.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Revised floor plans have not yet been submitted to reflect the changes/current layout of the deli. This was requested on the previous report.
Corrective Action(s): Submit revised updated floor plans (ie. properly labelled) for formal approval of the changes to the premises within 1 week. Failure to submit floor plans for unapproved changes will result in the issuance of a correction order (ie. ticketable offense).

Comments

All hand wash stations had soap, paper towel, hot and cold running water.
All coolers 4C or less (deli display cases, prep cooler, retail coolers, olive bar, walk in cooler downstairs...etc)
Bulk cheese containers stored in retail open face cooler unit at 3C. Covering containers appeared clean with self closing lids. Scoops to dispense cheese of adequate length to prevent contamination. Ensure this area is monitored by staff.
Freezers less than -18C (walk in downstairs, reach in retail freezers...etc).
Hot holding of soup 61C. Soup is made at the cucina location next door. Soup has self closing lid and ladle of sufficient length.
Chlorine sanitizer 100ppm in containers with cloths submerged.
Staff confirmed that meat slicers are used throughout the day and are taken apart and cleaned/sanitized minimum once every 4hrs.
Air compressor and sanitizer (spray bottle) available for cheese grater - this sanitation plan/procedure was approved by the previous district inspector (revised procedures posted on wall).
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Reviewed manual ware washing procedures with manager at time of inspection. Ensure all staff are trained.
Refrigerated delivery trucks no longer at premise. They are stored at the warehouse.
Covers/lids for bulk bread racks have been installed. Larger breads stored on top of the deli display cases were wrapped. Tongs available to take the smaller breads under staff supervision.
Outside storage unit (shared with cucina) appeared clean and well maintained. No signs of pest activity.
Downstairs area in premises is mainly a staff area with some prepackaged food storage and extra equipment storage (ie. not a food handling/preparation area).
