Observation (CORRECTED DURING INSPECTION): A dirty equipment is stored in a yellow (dairy) plastic container on the shelf under first prep. table. The operator claimed that it is a clean item.
Corrective Action(s): Immediately. Clean and sanitize the item and stored it in a sanitary manner. The yellow container/box is not intended for this purpose (it is not easy to clean and sanitize).

Comments

Front/dining area:

- Sink supplied with liquid soap and paper towels; hot/cold running water.
- Surface sanitizer (Quat) at 200 ppm.
Note: Hot holding unit was not in use at the time of inspection.
- Two chest freezers - satisfactory (locked).

Kitchen:

- General sanitation - satisfactory.
- Front kitchen hand washing sink supplied with liquid soap, paper towels, hot/cold running water.
- Coolers at 4 C or less.
- Freezers at -18 C or less.
- Temperature logs maintained.
Thermometers for cold units - available.
- Foods in coolers are covered.
- No signs of pests during inspection. Back door has screen door.
- High temperature dishwasher achieved 80.0 C on rinse cycle at plate level.
- Surface Quat sanitizer in spray bottle was at 200 ppm Quats.
- Dry storage - satisfactory.

Friendly reminder:
- Food must be stored off the floor even in the walk-in freezer/not under a storage shelf (second time noted).
- Clean items/utensils must be stored in a sanitary manner/not on the floor in the dry storage area between a storage shelf and wall. If those items are not in use, remove it from the kitchen
