Discussed the following with the owner:

-Preparing a schedule for each person.
-Having a map for prep areas, coolers, freezers and dry storage.
-Having an inventory of each person operating out of the commissary.

Inspection:

-Ensure that all foods are stored in sealed, pest proof containers.
-The mixer in the back is not in use. There is no hand sink nearby, so food prep cannot take place here.
-Sanitizer dispenser to be installed this week. Currently, the sanitizer is mixed manually.
Pest control is coming onsite regularly
All coolers were < 4 C.
Dishwasher had 50 ppm chlorine.
Hand sinks have hot and cold water, soap and paper towels.
