Observation (CORRECTED DURING INSPECTION): No soap was available at the front (servery/bar) hand wash station.
Corrective Action(s): Temporary container of soap placed at sink during inspection. Ensure a pump bottle or dispenser is in place by the end of today (26th September 2016).

Comments

*General sanitation very good. No pest issues observed during inspection.
*Ice machine maintained in clean condition. Scoop stored with handle kept out of ice.
*Hand sinks equipped with warm water, liquid soap and paper towels (see violations section).
*Discussed cutting board, tong and cleaver washing schedule with staff. Current procedures satisfactory.
*Walk-in cooler and freezer temperatures satisfactory. Good organization of raw and ready-to-eat foods in place in cooler units.
*Under-counter and prep line cooler temperatures satisfactory.
*Chicken hot holding unit under grills measured at or above 60 C during inspection.
*Low-temperature dishwasher provided 50ppm chlorine sanitizer in rinse cycle.
*Discussed room-temperature storage of sauces mentioned in previous report. Sauce containing buttermilk is now stored in a cooler between uses.
*Quat sanitizer dispenser operating at 200ppm. Ensure solution in cloth buckets is changed out regularly to maintain this strength.
*Washrooms checked were maintained in clean condition.
