Observation: During inspection, the walk-in freezer and walk-in cooler had a large build-up of dust debris.
Corrective Action(s): Ensure to clean the fan areas to prevent dust blowing on to food products.

Comments

* Handwashing stations are equipped with hot/cold running water, paper towel, liquid soap. Washrooms are equipped with hot/cold water, paper towels and liquid soap.

Temperatures:
* walk-in fridge was below 4C - internal temperature of sliced jalapeno was probed at 3.2C
* walk-in freezer was below -18C - internal temperature was measured at -22.1 during inspection
* prep cooler #1 was below 4C - internal temperature of sliced ham was 3.8C
* prep cooler #2 was below 4C - internal temperature of sliced tomatoes was 3.7C
* hot holding inserts wer above 60C - internal probed temperature of chicken soup was 78C
* hot holding counter inserts were above 60C - internal probed temperature of meatballs was 63.8C
Thermometers were present in all fridges and freezers

General maintenance and sanitation:
* 3 compartment sink - approved sanitizer is available - approved Quats sanitizer was measured at 200 ppm
* sanitizer in bottle (Quats) was available and measured at 200 ppm
* food products are stored 6 inches above the ground
* no sign of pest activity during inspection
* general sanitation and cleanliness is adequate
* washrooms are clean and sanitary

Administrative:
* permit is conspicuously posted with an up-to-date decal
* temperture logs were available during inspection - ensure to maintain temperature logs for all days of operation
* pest control records were not available during inspection
