Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (REPEAT VIOLATION - meat slicer found in very poor sanitary condition. Meat and vegetable debris heavily built up and dried on)
Comments

Meat slicer had been cleaned, but required more soaking and scrubbing at time of inspection.
To reiterate what was said yesterday, further violations of this sort will not be tolerated. This is a high risk machine due to amount of use and complexity of cleaning.
Bacteria such as listeria can easily grow on protein saturated surfaces, and when dried on are extremely difficult to remove, even with regular strength sanitizer.
Immediately after use (machine is used once daily), have it washed, rinsed, and sanitized. Make sure your staff know to unplug the machine before pulling it apart!!
Prep cooler having the same problem as yesterday - plan of action is to have technician come in tomorrow, have it continuously monitored for approx 2 days, then have a fan installed.
Call me once the fan is installed.
