Observation: Floor below upright cooler, freezer and under dough prep station observed with significant build up of dust, flour and general debris.
Corrective Action(s): Needs to be cleaned. Also need to ensure staff follow cleaning proceudures such that the build up over the course of multiple days is prevented. Operator has purchased a new steam cleaner will help with cleaning.

Premises has just switched over to auto dispensing chemicals, including Quats sanitizer in chemical closet. 3 Compartment sink area not set up for auto dispensing system. Noroquat located at back sinks. Measured two fo the three sanitizer spray bottles at 500+ ppm - one was perfect at 200 ppm. Main feed perfect.
**Make sure staff are properly trained for using chemicals A for dishwashing at sinks and B for hard surface sanitizing using spray bottles.

Cooling units less than 4 C - and quite clean on the inside.
Freezer at -18 C
handwash stations stocked with liquid soap and paper towels.

Sprayer at dish sink a useful addition to manual dishwashing. ;)
