Adequate handwashing stations not available for employees [s. 21(4)] (Observed no handwashing stations available in the kitchen. Operator informed that all employees use the 3 compartment sink to wash hands. this is inadequate as employees may neglect washing hands when the 3 compartment sink is full or in use. Every kitchen is required to have a designated handsink according to the Food Premises Regulation.

Observed staff not washing their hands after touching their face and hair, and prior to making hot food. To prevent contaminating food with bacteria, staff must wash their hands after completing a task and prior to handling food.)
Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -23C or colder; hot holding units above 60C; thermometers present; and temperatures recorded periodically. It is recommended that staff and management become more diligent in recording temperatures daily to aid in food complaints and to ensure equipment is working correctly.
- Quats sanitizer in cloth buckets and spray bottles was 200ppm.
- Hand sink installed in the front service area. The sink is accessible to hot-line staff and front service staff. Great job.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade container; covered; labeled; date coded; in groups with raw proteins separate or below RTE foods; and 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Damaged walls have been repaired and repainted.
- General sanitation level is satisfactory. No signs of pests.
- Monthly pest monitoring being done by Orkin. Reviewed reports and all in order.
- Aluminum foil lines the catch bins of the hamburger grill. Staff indicated that the foil is changed after each shift (2-3 times a day).
- FoodSafe certified staff present. Review all FoodSafe certificates, if there is NO expiration date on the certificate, then it has expired. Go to www.foodsafe.ca to register for the refresher course.
