Observation: Liquid soap and paper towels dispensers have not been installed adjacent to the hand washing sinks in the drive-thru and front service areas. Staff are unable to wash their hands frequently or easily, as the closest hand washing sink is in the back kitchen. Owner showed that he had the items in the store, but has not installed them yet. This was mentioned in the previous inspection and required to be completed in April 2022.
Corrective Action(s): Immediately install liquid soap and paper towel dispensers at the mentioned sinks. Failure to do so will result in the issuance of orders, tickets, and/or fines.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is excessive accumulation of grease on the wall and on the side of the deep fryer machine. This will attract pests. Owner explained that his area is cleaned every month.
Corrective Action(s): Immediately clean the mentioned areas to remove the grease. Increase the frequency which this areas is cleaned to twice a month.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The kitchen hand washing sink is not secured to the counter top, and the handle spins around making it difficult to turn the hot water on. Staff are unable to wash their hands correctly.
2) The ice machine has a crack in the plastic lid frame. Pieces of plastic crack and fall into the ice and get into drinks, and debris could fall into the ice through the cracks.
Corrective Action(s): 1) Repair or replace the faucet so it is secured and sealed to the counter top, and the hot and cold water can be easily turned on and off.

2) Replace the broken plastic lid and frame on the ice machine so it is sealed, cleanable and tight fitting to exclude debris.

Comments

A routine inspection was completed:
- Coolers below 4C; freezers below -12C; hot holding units above 60C; thermometers present; and temps recorded daily.
- Kitchen hand washing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles, cloth buckets, and in 3-comp sink had strength of 200ppm. Good.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins separate from RTE foods; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. Monthly pest monitoring contract in place.
- Exhaust canopies and filters are clean. Next professional cleaning to be done in February 2023.

**A follow-up inspection will occur to ensure the violations have been corrected. Failure to correct repeated violations will result in the issuance of orders, tickets, and/or fines.**
