Observation: - Thorough cleaning is still required in the following areas:
- Floors under prep coolers and chest freezers.
- Under four door Woosung cooler/ freezer unit.
- Interior of prep cooler across from dishwasher.
- Floors and walls under and behind all equipment and shelving on west side of kitchen (ice machine, counters, shelves, prep sink)
- All other surfaces and hard to reach areas.
Corrective Action(s): - Thoroughly clean the above noted areas and equipment as well as all other surfaces and hard to reach areas.

Observation: - Seals on single door undercounter cooler (under sushi bar) are starting to become detached from unit.
Corrective Action(s): - Repair and/ or replace door seals so that unit door can close tightly to help maintain unit temperature at or below 4 deg C. [Correction Date: November 16, 2017]

Note: Operator advised that owner is currently looking for a new unit to replace single door undercounter cooler. Ensure that replacement unit can maintain temperature at or below 4 deg C and is equipped with an accurate thermometer.

Comments

- Handsinks accessible and supplied with hot and cold water, liquid soap and papertowels.
- Wiping cloths stored in 100-200 ppm chlorine bleach sanitizing solution.
- 100-200 ppm chlorine bleach sanitizing solution available in spray bottles at work areas.
- Small domestic cooler beside chest freezer has been removed - items that were stored inside are now stored in undercounter coolers under sushi bar. No concerns at this time.
- Operator has replaced double undercounter cooler (under sushi bar) with a new unit. Unit temperature: 4 deg C
