Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in spray bottle was measured to be 50 ppm. Operator states that the sanitizer was prepared the previous week.
Corrective Action(s): Prepare fresh bleach sanitizer. Ensure sanitizer is prepared regularly in order to maintain adequate concentration (100 ppm). Refer to the manual dishwashing sign posted above the two compartment sink for instructions on preparing bleach sanitizer properly. Date to be corrected by: Immediately

-General sanitation is satisfactory
-Hand washing station is supplied with hot and cold water, liquid soap, and paper towels
-Coolers (Stand up, under counter, prep) are at < or = 4C
-Freezer (Stand up) at < or = -18C
-Hot holding units at > or = 60C
-High temperature dishwasher reached 74.3C at the plate level during the final rinse
-Bleach is available in spray bottles for surface sanitizing. Ensure it is prepared fresh regularly to maintain the concentration at 100 ppm.
-Dry storage is satisfactory
-Food items are labelled and protected from contamination
-Chemicals are stored separate from areas of food prep and storage
-Washrooms provided to customers are clean and equipped with proper hand washing stations
-No signs of pests observed during inspection
-Reminder to staff certified in FOODSAFE Level 1 prior to July 29, 2013. Certification will expire on July 29, 2018. Please ensure recertification before that date.
