Observation: Flies noted in the back of the kitchen. Pest control is coming onsite regularly, report reviewed during the inspection.

Observation: a) Cleaning needed underneath the cook line to remove grease buildup.
b) A cloth covered in batter was draped on top of the handles of the kitchen handwashing sink.

Observation (CORRECTED DURING INSPECTION): A knife with a taped handle was used for prepping potatoes. Since a taped handle cannot be easily cleaned, it was discarded.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached > 71 C at the plate level. Check daily.
Bleach sanitizer solution was measured at 100 ppm.
Food is stored off the ground.
Ventilation hoods were clean.
