Observation: Sushi bar cooler not keeping foods less than 4 C. Measured multiple products at 8 C.
Corrective Action(s): Remove large portions of fish and return to fish cooler. Any remaining potentially hazardous foods in sushi bar cooler must be supplemented with ice until unit can keep food at 4 C or less. Call for servicing. *Obtain thermometers for both sushi cooler units and place such that they can be easily monitored.
**Reorganize fish storage and prepping processes to ensure product enters these units at or below 4 C.

Fridge in kitchen storage area defrosted. Temperature sensor moved to alternate location. Temperature at 4 - 5 C - OK.
Upright beer cooler at 16 C. Only pop and beer to be kept in this unit until it can demonstrate proper temperature controls.
***Keep daily temperature logs for all units and ensure cooling maintained at 4 C or less at all times.
