Observation (CORRECTED DURING INSPECTION): 1) 2 moldy red onion observed in storage in walk in cooler and burger prep cooler
2) Foods stored in undercounter compartment of burger prep cooler with excessive dripping from defrosting the ice.
3) Bread stored uncovered and unprotected in containers meant for human consumption. Unknown if the container has ever been cleaned and sanitized properly.
Corrective Action(s): 1) Discard contaminated food
2) Do not store foods in undercounter burger prep cooler compartment until defrost issues have been resolved. Store foods in stand up cooler.

Observation (CORRECTED DURING INSPECTION): 2 Large buckets of hot food stored in the walk in cooler. Chicken vegetable soup measured at 47C and potatoes measured at 80C

Corrective Action(s): 1) Keep glasswasher testing strips in proper storage conditions. Wet test strips cannot provide accurate readings.
2) Fix burger prep cooler to maintain 4C or less and defrost excessive ice buildup
3) Maintain walk in cooler to be 4C or less
