- Handsinks are stocked
- 200ppm QUAT sanitizer available
- Temperatures of refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers)
- High temp dishwasher achieved adequate sanitizing temperature (>71C at plate's surface)
- Temperature log is in place
- Noted some flies. Pest control in place (fly attractant found in between a cooler & the wall)
- Foods are stored off of floor
- First In First Out practice followed
- Foods are dated
- General sanitation is satisfactory

- Ensure that food contact surfaces (cutting boards, utensils) are washed & sanitized every 4 hours
