Observation (CORRECTED DURING INSPECTION): Small amount of old food debris found behind blade guard of meat slicer.
Corrective Action(s): Ensure to completely disassemble meat slicer after each use to properly clean and sanitize all parts.

Observation (CORRECTED DURING INSPECTION): One bucket of quat sanitizer solution (front server area) was at a concentration of 50 ppm.
Corrective Action(s): If used wiping cloths are being returned to sanitizing solution, ensure to change solution every 2 hours at a minimum. Operator changed solution at time of inspection, 200 ppm quats detected.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution in all other buckets were at 200 ppm
- Dishwasher had 100 ppm chlorine detected at dish surface after rinse - good.
- Glasswasher at bar had 25 ppm iodine detected at glass surface after rinse - good.
- Test strips available on-site for monitoring sanitizer concentrations
- All drawer coolers, prep coolers and inserts were measured to be at or below 4C. Walk-in coolers and bar coolers were below 4C
- Freezers were at or below -18C
- Hot held food items were above 60C - good. Utensils held in hot water at above 60C in between uses.
- Ice cream scoop held in dipper well - good.
- General sanitation very good, no grease or food debris accumulation observed under/behind equipment or on ventilation canopy baffles.
- Ice machine maintained in sanitary condition
- Food storage practices excellent
- Pest control in place, no signs of pest activity noted
- Temperature records well maintained and up to date
