Hand wash sink supplied with liquid soap and paper towels in dispenser.
Fridges <4C.
Freezer <-18C.
Cooks were preparing home made beef meat balls at the time of inspection.
Trays go into dishwasher, counters are cleaned in place.
Sanitizer >100ppm chlorine (around 400-600ppm): Advised to dilute at least in half (pour out half into another spray bottle and fill both with water).
Cooks wear hair nets and aprons while preparing raw meat.
If preparing salads or serving, recommend an apron change, hand washing, new gloves.
Dishwasher is around 71C (69.5C) - has adjustable dial that operator can turn up and increase temperature.
No signs of pests at the time of inspection.
Prep areas are clean.
Ventilation hood is clean and free of grease.
Window was open during the inspection: if planning to open during summer, highly recommend this be screened to prevent flying pests.
