Comments

- Hand sink supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available in bucket at 200 ppm. Wiping cloths were being stored in solution - good.
- High-temperature dishwasher reached 78C at plate surface level during rinse cycle
- Fish was thawing under cold, running water at time of inspection. Good.
- All coolers were at or below 4C
- Freezers were at or below -18C
- All food items in walk-in cooler and upright cooler were covered. Good
- Dry storage area satisfactory
- General sanitation satisfafctory
- Pest control operator's last visit was January 15th. Report available on-site for review. *Ensure pest control is visiting on a monthly basis - report from December was missing.
- No droppings were observed in kitchen area or dry storage area at time of inspection. Good. Please continue to monitor for activity.
- Upstairs banquet area rarely used. No signs of pest activity noted at time of inspection.
