Observation (CORRECTED DURING INSPECTION): Milk carafe for customers temperature was 9C. Milk is a potentially hazardous food capable of the growth of pathogens and their toxins - danger zone [4-60C - no more than 2 hours].
Corrective Action(s): Place milk in cooler until <4C before use again. Implement a strategy to ensure milk is always <4C (eg switch out carafe every <4 hours with chilled one; top up milk regularly)

Observation (CORRECTED DURING INSPECTION): Observation # 1 - Chlorine bleach sanitizer greater than 200ppm (bleached test strip). Chlorine bleach concentration required to be 100ppm (½ tsp in 1L water) to effectively sanitize food contact surfaces without leaving unwanted residue
Observation # 2 - Bar cloths observed lying on counters in a moist state. No sanitizer immediately available (in cupboard in back room). Wet cloths can encourage the growth of pathogens, which are substantially spread on surfaces. Cloths soaking in sanitizer solution will reduce the number of pathogens to acceptable levels
Corrective Action(s): Correction # 1 - Operator diluted chlorine bleach solution
Correction # 2 - Begin soaking cloths in 100ppm bleach solution at all times when not in use
