Observation (CORRECTED DURING INSPECTION): 20 litre pail of tarter sauce 21C
Corrective Action(s): Make sure that freshly made sauce is cooled rapidly in shallow pans, using an ice bath and/or a sanitized chill stick.
Revised food safety plan to be submitted.

Observation (CORRECTED DURING INSPECTION): Hamburger patties in grill cooler too warm at 7C to 9C; salmon fillets 6C
Corrective Action(s): All potentially hazardous foods above 4C for greater than two hours to be discarded; all other foods to be relocated to alternate cooler space, portioned and iced to maximize cooling.
Make sure that only small quantities of food are placed in this cooler at a time as this refrigerator can not maintain temperature.
The use of ice around food inserts to aid temperature control should be a short term emergency assist, not a standard of practice. Ice is not an effective or efficient coolant as it melts rapidly negating any cooling effect on the food and potentially increasing the food safety hazard.

Observation (CORRECTED DURING INSPECTION): Sanitizer buckets (2 out of 3) had chlorine levels greater than 200 ppm chlorine; 1/2 of the spray bottles for use in the dining room were also over 200 ppm chlorine.
Corrective Action(s): Chlorine level for sanitizing should not exceed 100 ppm Chlorine bleach, make sure that staff accurately measure both the volume of water being used and the amount of bleach being added. DO NOT free pour bleach.

Observation (CORRECTED DURING INSPECTION): Kitchen employee with large bandage wrapped around his right palm.
Corrective Action(s): Employee should be wearing a "full" glove; not one with the fingers cut out and should be assigned tasks which minimize his contact with food.

Corrective Action(s): Wire racking in walk-in cooler and inside of ice machine to be thoroughly cleaned and sanitized.
All potentially contaminated food i.e. ice to be discarded.
Dented cans are to be discarded or returned to the supplier. DO NOT use.

Observation: Significant number of flies in kitchen, dishwashing area and back storage.
Corrective Action(s): Integrated pest management plan to be developed and implemented by a qualified Pesticide Applicator; fly strips currently in use are not approved for food service establishments.

Observation: .
1)
Food accumulations and debris on food carts, food containers in both the dry storage area and walk-in cooler, on kitchen shelves.
Debris behind and under equipment and prep lines.
2)
Floor in bar area moist and rotting several areas where rotted floor has left significant depressions in the floor. The beer cooler beside this area is leaking water which has caused mould accumulations along the bottom of the cooler as well as both the glass door and frame.
Corrective Action(s): .
1)
Premises needs a thorough general cleaning to remove food accumulations and debris which will also facilitate an integrated pest management plan.
2)
Rotting floor is bar area is to be repaired so that it is smooth, impervious and easily cleanable. The cooler needs to be repaired/replace so that it is not constantly dripping water that is eroding the building structure.
