103 - Failure to hold a valid permit while operating a food service establishment [s. 8(1)]
Observation: The premises has an expired health permit decal as they have NOT paid the yearly permit fees of $250. The invoice was mailed out in April and required to be paid upon receipt.
Corrective Action(s): Immediately pay the permit fees of $250 and obtain a new health permit decal. Failure to do so, will result in the closure of the restaurant until full payment is received.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen cuts of meat were being thawed under running hot water in a prep sink. This is unsafe as the outer layers of meat will thaw quickly and be at room temperature while the centre is still frozen. Germs will grown on the outer surface of the meat.
Corrective Action(s): Immediately turn off the hot water and turn on the cold water. Frozen foods shall ONLY be thawed under running cold water to ensure the outer layers of meat are maintained at 4C at all times during thawing. During the inspection, staff turned off the hot water and turned on the running cold water.

304 - Premises not free of pests [s. 26(a)]
Observation: Found mice dropping in the dry storage room on shelves and on the floor under shelves and platforms. Mice droppings contain germs which will contaminate food.
Corrective Action(s):
1) Scrubbing and cleaning of the dry storage room surfaces (floors, shelves, walls, outside of food containers, etc.) requires to be completed to remove mice droppings and food stains. Take all items off the shelves and move all platforms so the shelves and floors can be properly cleaned.
2) Buy food containers with tight fitting lids, and place ALL foods (open and unopened) in containers to prevent mice contaminating the food.
3) Contract a professional pest company to eliminate the mice problem using non-chemical means (traps, glueboards, etc.). A thorough inspection of the dry storage room and all other areas (interior and exterior) of the building shall be done to determine entry points and elimination strategies.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
1) The u/c cooler door seals/gaskets are damaged and duct tape has been stuck to the gaskets, as a means to repair them. Duct tape is not food grade, durable or cleanable. There is accumulated food debris on the duct tape and chemicals from the tape can get into food. Staff indicated that the door seals/gaskets can't be replaced as they don't make them anymore.
2) Cardboard lining shelves is soaked with oil, grease and food debris. Cardboard is not food grade, sealed, durable or cleanable. This will attract pests (flies and mice) and is a fire hazard.
Corrective Action(s):
1) Replace the whole door and gasket with a new one, if you are unable to just replace the gaskets. OR, replace the whole u/c cooler unit with one that has intact door gaskets that can be cleaned, and can keep food below 4C/40F at all times.

2) Immediately throw away all cardboard lining shelves and cupboards, this must be done every night. Wash the shelves and place new cardboard on the shelves in the morning. You may wish to use metal pans to line the shelves and cupboards, as they can easily be placed in the dishwasher at the end of the night to be cleaned.

Observation: The faucet, for the handwashing sink in the front service counter, is not secured or sealed to the counter top. Water is leaking and pooling in the cupboard below the sink. This will attract and breed flies and mice.
Corrective Action(s): Immediately secure the faucet to the counter top and seal around the faucet so water can't leak and pool in the cupboard below.
