306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) There is pooling water in the corner under the back washing sink. The pooling water will attract and harbor flies.
2) There are food stains on the walls beneath the back washing sink, on the outside walls of the dishwasher, on the underside of the washing sink, and on the legs of the washing sink. Food stains will attract pests.
3) Cloth wiping towels are being stored on the counter tops when not in use. Bacteria will grow on the cloths as they sit on the counter. Staff explained that the cloths are to be changed every 2 hours with clean ones, but they do NOT have enough to do this. Presently, staff are washing and sanitizing the cloth towels at mid-day and end of day only, this is not frequent enough.
Corrective Action(s):
1) Ensure all pooling water and food debris is mopped up at the end of each day to eliminate/discourage pests.
2) Wash the mentioned areas with hot water and soap to remove the food stains, and then sanitize the areas. This shall be done daily, especially at the end of the day.
3) Staff must store cloth towels in a bucket of bleach and water (1tsp of bleach to 1L of warm water) when not in use, and the solution shall be changed every 2 hours.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The probe thermometers, used to check the temperature of steamed milk, are not accurate and have water inside thermometer. Staff are not able to correct steam milk to the correct/safe temperature.
Corrective Action(s):
Purchase new probe thermometers and discard the old one.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezer was -18C; thermometers present; and temperatures recorded 2x a day.
- High temperature dishwasher had a rinse cycle temperature of 71C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; wrapped in saran wrap; labeled; date coded; and stored 6" off the floor on shelves or racks.
- No expired foods for sale or in use. FIFO rules being followed.
- Improvement seen in the sanitation level. Sanitation is generally good, other than the mentioned areas. Continue the work being done to keep the premises clean. Ensure to wash all surfaces with soap and hot water to remove food debris (cream, sugar, syrup, etc.) and then sanitize with bleach and hot water (kills bacteria).
- Improvement seen in the fly infestation problem. Minimal to no flies found in the back room. Continue keeping up with the cleaning and removal of food debris and pooling water.
- FoodSafe certified staff present.
- Disposable gloves used to handle some food products. Remind staff that gloves shall be used once and then thrown away. Once staff have been removed/taken off the gloves, they MUST be thrown away.
- Bleach present, but no sanitizing solution present at time of inspection.
