Follow up inspection:
-Hot-held rice in the rice warmer was at or above 60 degrees C internally (near 66 degrees C).
-Heat of the hot-holding unit was near the maximum setting. It was mentioned that a maintenance person repaired the hot holding unit.
-100 ppm chlorine sanitizer was available in the kitchen in the bucket and spray bottle.
-Dough mixer was covered with saran wrap.
-Note: Continue the pest control program measures and pest control program discussed during the previous routine inspection.
