Ensure all areas of the kitchen and storage area regularly cleaned and sanitized to maintain sanitary condition. Corrective Action(s): Correct by May 16/18 Violation Score: 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Prep cooler beside hot holding units still has a broken gasket that requires replacement. Operator temporarily fixed the gasket but needs to install the new gasket, they have already purchased. ensure gasket is replaced in prep cooler to ensure temperature is maintained 4 C / 40 F or colder at all times. Corrective Action(s): Correct by May 16/18
