Observation: Large rodent dropping in washroom.
Some rodent droppings in mop room.
Flies are present in every room including mop room, kitchen, storage room.
Flies are low flying, also found in corner of line cooler.
Operator using bait to attract rodents and flies (in bowl that was removed, also in snap trap under dishwasher).
Corrective Action(s): 1. Remove all droppings, check along walls and corners.
Spray down along walls with sanitizer. Bleach is recommended. This will hopefully remove smell of droppings and urine.
2. Install fly traps (not above food prep).
3. Remove all bait. Clean areas that had bait.
Check traps frequently and follow up with your pest control contractor.

Observation: Window pane in kitchen is kept open, crack is large enough for rodents to enter.
Flies also can enter kitchen.
Corrective Action(s): Use fine mesh barrier to prevent flies and rodent entry or keep window pane closed.

Observation: Various surfaces including prep counters are sticky or grimy and have visible black residue or food residue.
Corners of kitchen are black with grime.
Sweep is deteriorating, frayed and stuck on food and rodent droppings are visible.
Corrective Action(s): Clean and sanitize all surfaces with your Quat sanitizer.
Replace with new sweep, clean sweep and sanitize with bleach or other sanitizer regularly so you are not spreading rodent smells around the facility as you clean.
Clean and sanitize all corners, under shelving and along walls, especially where droppings were once present.
