Observation (CORRECTED DURING INSPECTION): Glasswasher in bar empty of sanitizer. Discussed with bar manager and container replaced. Fed into system pretty quickly and measured 50 ppm. The current Bar checklist requires a water temp check for glasswasher as part of pre-lunch audit. Sanitizer availability most critical to proper use of this unit.
Corrective Action(s): Recommend switching or adding a sanitizer container check at beginning of day to bar checklist. Test strip audit can come anytime after that.

Comments

Make sure that any time stainless steel inserts get doubled up to either supplemented hot holding or cooling units that a bed of ice or steamed water are used and maintained and remain in contact with the insert holding the food.

Make sure all paper towel dispensers are functioning correctly. Noted units in the kitchen and public washroom having trouble feeding the paper towels.

Noted new walk-in cooler and freezer! New shelving to go along. Looks great!
**Make sure the floor in the freezer is maintained by staff above and beyond the responsibilities of the third party mat contract. Do not let the build up of residue on the floor become a significant cleaning issue.
**Make sure to finish placement of food grade ceiling tiles above the walk-in unit to minimize the migration of dusts etc. into or onto food.

Hosing to Quats main feed in dishpit to be replaced.
