Cabbage/bean sprout mix is stored ice bath by handsink.
Soup stock has relocated so that all soup stocks are stored on top of the undercounter cooler.
Aka miso and ground pork (on ice) have been relocated from front of the handsink (originally blocking handsink access, by wok station), to beside the soup stock station.
Noodles are covered and stored underneath the miso and ground pork topping area on the same wire shelf.
Handsink at the wok station is now accessible and fully equipped.
Spray bottles and sanitizer stations are filled at 200ppm Quats.
Bleach is only applied on the wiping clothes at the end of the day using the sink in the back, not the same bucket.
Temperature logs are in place.
*noted to staff to add titles (mushrooms and ground pork) for hot holding units. Chicken and tonkatsu soup stock hot holding temperatures are also being recorded.

Note: discussed small space noted in ramen noodle making area. Owner may be seeking a separate commercial space to make noodles altogether. Please advise when you find the commercial space, floor plans must be reviewed and approved prior to relocating the ramen noodle space. Submit proposed floor plans to City of Burnaby. Ensure not to block the handsink at the ramen noodle making area as discussed.
