Observation (CORRECTED DURING INSPECTION): Bean sprouts stored in trays on prep counter measured 10 deg C.
Corrective action: bean sprouts must be stored at 4 deg C or colder when not in use. Smaller portions may be kept out for immediate use but must not be more than 2 hours before returning to cold storage.
->move bean sprouts to cooler.

Observation (CORRECTED DURING INSPECTION): Bleach solution in spray bottle measured >200ppm chlorine.
Test strip turned white ("bleached out") indicating a concentration that is too high.
Corrective action: dilute solution to reach 100-200ppm chlorine. Purchase test strips to verify solution concentration.

Observation (CORRECTED DURING INSPECTION): Front and back handsinks were obstructed at the start of inspection. Basket in front handsink and plastic tub on top of back handsink.
Corrective action: move all obstructions. Handsinks must be accessible for handwashing at all times.

Observation (CORRECTED DURING INSPECTION): - Several food items stored in prep cooler uncovered (brocolli and other vegetables)
- Opened can of Satay sauce stored on counter without refrigeration. Can states to refrigerate after opening.
- Prepped vegetables in walk-in cooler uncovered.
Corrective action: ensure all foods are protected from contamination by following manufacturer labels and covering stored foods.
-> cover all stored foods and move Satay sauce into cooler.

Observation: - Food debris under cook line, dishpit and around back storage area
- Significant grease/oil buildup on the sides of cooking equipment and on grease panels.
- Prep cooler handles and inside walls were sticky to touch.
Corrective actions: ensure all above noted areas are cleaned to remove food debris and grease buildup.
Significant debris or buildup may attract pests.

Routine:
- Prep cooler : 4 deg C
- Domestic freezer (front) : -18 deg C
- Bubble tea fridge : 4 deg C
- Beverage cooler : 6 deg C (beverages only, non-PHFs)
- Domestic freezer (back) : -16 deg C
- Chest freezer : -20 deg C
- Walk-in cooler : 2 deg C
- Handsinks supplied with warm water, liquid soap, paper towels (see violation above)
- Bleach solution in bucket with wiping cloths measured 100-200 ppm chlorine.
- Ice machine kept in sanitary condition. Ice scoop stored out of the machine.
- Manual warewashing method using 3 compartment sink adequately demonstrated
* Reminded to never mix chemicals (bleach with detergent)
- Hot held items : rice (66 deg C), soup (74 deg C)
- Rice scooper stored in sanitary condition.
- No signs of pests during the inspection, however noted a small gap in the bottom left corner of screen door.
** Reminded to operator to monitor the condition of the door, suggest to purchase a door sweep.
- Health permit posted in conspicuous location.
- Operator has not yet renewed FOODSAFE - waiting for Chinese version to become available. Son has valid FOODSAFE.

- Dine-in tables and chairs are set up again. Backs of chairs must be 2m apart.
