Observation (CORRECTED DURING INSPECTION): 1) Tempura prawns are left on counter beside dishwashing area, at room temperature. 24.9 Celsius internal temperature. Discarded about 2 lb of prawns.
2) Cooked beef left out on counter, internal temperature was 21.6 Celsius. Operator indicated that beef is taken out of fridge and put back in fridge repeatedly as needed. This will put your food in the danger zone multiple times, and is a very poor practice. Only remove as much as you need from the fridge for cooking. A second fridge for the grill area is highly recommended.

Observation (CORRECTED DURING INSPECTION): 1) Gyoza were thawed and then stored at room temperature. Internal temperature is 22.6 Celsius. Thaw in fridge or in cold running water. Keep cold until you cook them. Approximately 1 dozen gyoza discarded.
2) Bean sprouts were stored at room temperature. 20 Celsius. Discarded.

Observation (CORRECTED DURING INSPECTION): Cleaning cloths are left on countertops with no trace of bleach. No bleach solution prepared, and first attempt was far too strong. Use only about a tablespoon of bleach for a 1 gallon bucket of water.

Observation: Many surfaces (walls, floors, shelves ) are quite dirty. Clean.

2) Many shelves and walls are finished with corrugated plastic. This is not considered durable or easily cleanable. Remove and refinish with a durable smooth easily cleanable surface.

Comments

Fridges are all <4 Celsius.
No sign of pests.
Hand sink is stocked and working.
Hot holding for miso soup is 70 Celsius.

Note that the infractions for improper cooling and improper thawing have been noted on two routine inspections in a row. File review indicates that the previous inspector issued violation tickets for improper cooling. Further infractions will result in an immediate violation ticket and possible further enforcement such as conditions on your permit, closure order, etc.
