Observation: Food (eg. cut vegetables, raw meat/seafood etc) in the walk in refrigerator is not covered with lids. Food items such as raw fish/meat not stored below raw uncooked vegatables.
Condensed milk in the undercounter bar stored in its original metal container.
Ensure that all foods in the walk in refrigerator are covered with lids to prevent any contamination.
As well, ensure that any raw meats/seafoods are stored separate or below any raw/uncooked vehgatables or ready to eat foods.
Ensure that any food originally stored in cans are stored in food grade containers once opened.

Observation: Grease build up noted under stoves/deep fryer. As well, mould growth noted in the undercounter bar (eg. on pop lines and as well, on the back end on the undercounter bar refrigerator).
Ensure that any grease accumulation under stoves/deep fryer is cleaned up and as well, any mould growth in the undercounter bar refrigerator is cleaned up/removed. Continue to keep facility clean and organized.

All refrigerator (walk in refrigerator, under counter bar temperatures are less than 4C)
All freezers (eg. walk in freezer and standup freezer) temperature are less than -18c
Hot holding (eg. sauces) temperatures are greater than 60C
Dishwasher (high temperature- temperatures are greater than 60C
Dishwasher (high temperature) temperature is 71.6C at plate surface, which meet the requirement of 71C at the plate surface.
Bar glasswasher is not being used. All glasses are being washed in the dishwasher.
Sanitizer solution (bleach) is being used to soak cloths at a concentration of 100 ppm
Foods that are cooked ahead of time is cooled quickly and then placed into the cooler.
Food from approved sources.
Chemicals stored away from food in another room.
Handsink is available and is fully stocked with paper towels, soap and warm water.
Washrooms are maintained in a clean and sanitary condition. Handsink stocked with paper towels and soap.
Food Safe trained staff is onsite.
No sign of pests/rodents a the time of inspection.
Cardboard is used to line specific areas of kitchen. Noted that the cardboard is changed often.
Overall sanitiation of premises is ok. Continue with routine cleaning and organizing.
Staff hand hygiene is good. Gloves being used.
