Observation:
The exhaust canopy cleaning sticker indicates cleaning to be done on June 20, 2018 by a professional company. Accumulation of grease & dust in the canopy and exhaust chimney is a fire hazard.
Corrective Action(s):
Immediately call the professional cleaning company in to service and clean the exhaust canopy. Continue your regular cleaning schedule of the filters and accessible surfaces between professional cleanings.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C; and thermometers present.
- High temperature dishwasher rinse cycle temperature was 71C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottle was 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present.
- General sanitation level is good. No signs of pests.
- No expired foods in use or for sale. FIFO rules being followed.
- Owner explained that he currently has closed the restaurant portion of the business and is not sure if he will re-open it. He is using the kitchen for catering of private events and making the tortilla chips (retail and distribution). Please inform our office if you decide to permanently close the restaurant portion.
