301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation:
There is built up grease and food debris on the following areas which will attract pests:
- Exhaust hood and filters.
- The side of the dishwasher, between the dishwasher and sink.
- The interior walls and basin of the dishwasher.
- The 3-compartment sink basins and the underside of the sinks.
- The hand washing sink, at the front grill area.
- The exterior surfaces of food containers and lids.
- Fridge and freezer doors and handles.
- The exterior surfaces of the stove.
Corrective Action(s):
Scrub these areas with hot water and soap, and then sanitize with bleach to remove the grease and food debris. This SHALL be done on a more frequent basis.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
The dishwasher rinse cycle had [Cl2] of 0ppm. Dishes are not being sanitized and therefore, germs can be passed to other customers.
Corrective Action(s):
Immediately stop using the dishwasher and call a repairman. The 3-compartment sink method of washing dishes requires to be used until the dishwasher is fixed. Dish soap and bleach present to do manual washing. The bleach solution shall be 100ppm strength in the 3rd sink.
During the inspection, the repairman arrived and fixed the dishwasher. The [Cl2] was 50ppm.

103 - Failure to hold a valid permit while operating a food service establishment [s. 8(1)]
Observation (CORRECTED DURING INSPECTION):
The premises is operating without a valid decal as the yearly permit fees have not been paid. Hand delivered the outstanding permit fees letter to the owner.
Corrective Action(s):
Immediately pay for the yearly permit fees of $50 within 10 working days. Failure to do so, will result in the issuance of fines and/or closure. During the inspection, the owner provided a cheque (#1530) for the outstanding fees of $50.

209 - Food not protected from contamination [s. 12(a)]
Observation:
Found open tin cans of food in the cooler. The tin can will rust, and the rust will get into the food.
Corrective Action(s):
Immediately transfer food out of tin cans and place in food grade containers such as stainless steel, glass or hard plastic.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The following areas have accumulated food and grease on them, and this will attract pests:
- Floors in the back kitchen area and in the walk-in-cooler.
- The wire racks beside the stove and in the front grill area.
- Drain pipes under the dishwasher and 3-comp. sink.
- Pipes along the walls of the front grill area.
- The shelves and cupboards in the back kitchen.
- Front windows.
Corrective Action(s):
These areas require to be scrubbed with hot water and soap to remove the food and grease, and then sanitized with bleach. This shall be done every day.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Found materials being used that are not food grade, durable, sealed or cleanable in the following areas:
- Aluminum foil is covering stove.
- Unsealed wood and cement blocks are being used as platforms for the dishwasher, and they are covered with food and grease.
- Wood platform covering one of the sinks is rotting and has accumulated food on it.
- Plastic basket in sink has accumulated food, grease, and mould on it.
- The front grill area has a grease interceptor that the lid is open and off, and the pipe is not connected.
Corrective Action(s):
The following requires to be completed immediately:
- Remove and stop using aluminum foil to cover the stove top.
- Remove all the wooden and cement blocks under the dishwasher and replace with a proper platform that is smooth, sealed, durable, and cleanable.
- Throw away the wood platform in the sink and do NOT replace with another platform.
- Throw away the plastic basket and replace with a new one.
- Call a plumber it repair the grease interceptor in the front grill area so it meets the Plumbing Code.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION):
The low temperature dishwasher had [Cl2] of 0ppm and the other dispensing units (soap & rinse aid) didn't appear to be working.
Corrective Action(s):
Immediately stop using the dishwasher and call a repairman. Have the repairman maintenance the machine so it is working as per manufacturer's specification, and the [Cl2] is between 50-100ppm. Manually wash and sanitize dishes using the 3-compartment method until it is fixed. Purchase Cl2 test strips so you can test the machine daily.
During the inspection, the repairman came and the [Cl2] was 50ppm, and test strips were provided. The dishwasher can be used to wash and sanitize dishes.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -17C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General food storage practices followed. Foods stored in food grade containers; covered; in groups with proteins separate or below RTE foods; and 6" off the floor on shelves.
- FoodSafe certified staff present.
- No signs of pests.
- Have grease interceptors serviced by a professional company.

**A follow-up inspection will be conducted on July 9/18 to ensure all violations have been corrected.**
