- Food court area and equipment maintained in sanitary condition
- Handsinks supplied with hot and cold water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 3C
- Prep cooler 1C
- Cooler under hot holding unit 4C
- Wiener cooler 4C
- Milk/cheese cooler 3C
- Walk-in freezer was -21C
- Single door upright freezer -16C
- Product in soft serve machine was 4C. Manager knowledgeable about cleaning and sanitizing procedures for soft serve machine.
- Hot holding of potentially hazardous foods was at acceptable temperatures (>60C)
- Gravy 74C
- Pizza in display 63-70C
- Chicken strips in Henny Penny hot holding unit 65-67C
- Wieners in hot dog warmer 63C
- Cooking temperatures monitored and recorded.
- Quats sanitizer solution in 3 compartment sink was measured to be 200ppm. Observed proper manual warewashing procedures.
- Quats sanitizer solution present in buckets and spray bottles. Concentration of all quats solutions checked measured 200ppm. Test strips present to verify concentration
- No signs of pest activity noted.
- Managers and Supervisors have completed Foodwise certification (Foodsafe level 1 equivalent)
*Noted sections of the floor which were pitting. Asst Warehouse Manager reported floor is scheduled to be refinished in March and food court will be closed while floor is replaced. Finish must be washable, durable and non-slip.
