Observation (CORRECTED DURING INSPECTION): Person in charge informed that the sliced donair portions from the cone are cooled without being subject to a secondary cook step and the cooled portions are then subsequently reheated on the grill-top prior to selling and serving to customers.
Corrective Action(s): Ensure that the sliced donair meat portions undergo a secondary cook step on the grill to properly cook the sliced meat portions to at least 71 degrees C for beef and at least 74 degrees C for poultry prior to the subsequent cooling, reheating, and serving steps. Person in Charge agreed to fully cook the sliced donair portions from the cone using a secondary cook step on the grill prior to the cooling process. The corporate food safety plan procedures were not accessible on-site for reference at the time of inspection. Information from the Guideline for the Safe Preparation and Serving of Donairs, Shawarmas, and Similar Products was provided.

Observation: 1. Black buildup of debris and mould was observed inside the ice machine.
2. Food residues were present on the blades of a tomato slicer.
Corrective Action(s): 1. Drain the ice and clean and sanitize the interior of the ice machine in accordance with the manufacturer's cleaning directions to remove the buildup and maintain it in a clean condition.
2. Disassemble the tomato slicer and wash, rinse, sanitize, and air dry the blades to maintain it in a clean condition.
Correct today and prior to reuse.

Handsinks were properly supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were properly washing their hands during the inspection.
Walk-in-cooler, under-the-counter cooler drawers, front prep. cooler, and beverage cooler were at or below 4 degrees C.
Walk-in-freezer temperature was satisfactory.
Hot-held food was at or above 60 degrees C.
Dry goods were stored off the floor in the separate dry storage room.
200 ppm QUATS sanitizer was available from the dispenser at the 3-compartment sink unit.
200 ppm QUATS sanitizer was available inside a sanitizer pail.
Pest control program is in place via the Mall.
No signs of recent pest activity were evident at the time of inspection.
Staff with valid FOODSAFE level 1 equivalent course training (Canadian institute of Food Safety: Food Handler Certificate, expiration date: January 5, 2027) was present on shift.
