Observation:
Several food items not covered and not protected from contamination:
- some chopped vegetables in walk-in cooler
- spice bucket in very back storage area
- two opened bags of flour
Corrective Action(s):
Ensure all food items are covered and protected from contamination.
- All chopped/sliced items have been processed and need to be covered using a food-grade plastic/cover.
- Spice buckets need to have proper lids.
- Any opened flour needs to be transferred to a pest-proof container with a lid.
To be corrected today.

Observation:
General cleanliness and sanitation of facility needs improvement, especially:
- Underneath 3-compartment sink
- Under and behind all equipment
- Door seal of walk-in cooler
- All shelving (inside cooler, dry storage, equipment/dish storage)
- Hard to reach areas
- Front waiting area
Corrective Action(s):
Clean all areas listed above. Ensure to follow your sanitation plan for daily, weekly, monthly and seasonal cleaning. To be corrected by October 9, 2019.

Observation:
- Sandwich cooler in back has an ambient temperature of 11.1 degrees Celsius.
- Digital temperature displayed on cooler was 3 degrees Celsius.
- At the time of inspection, there were no potentially hazardous foods in this cooler.
Corrective Action(s):
- Repair sandwich cooler so the temperature is maintained at or below 4 degrees Celsius.
- Repair digital temperature of cooler so the correct temperature is displayed.
- Do not store any potentially hazardous foods in this cooler until temperature has reached 4 degrees Celsius or below.
To be corrected by October 9, 2019.
