Health permit valid and posted.
Hand sinks in the back kitchen were provided with liquid soap and paper towels.
Quats sanitizer measured 200 ppm.
Prep line coolers were at 5-7 deg C. (Constant open/close-ensure cooler cabinet doors closed properly at all times.)
-Adjust so that coolers on colder setting so compensate for the constant open/close during busy times.
Hot holding for sauces was between 65 - 80 deg C.
Walk-in cooler registered at 2-3 deg C.
Upright freezer was at -19 deg C.
Low temp. dishwasher had chlorine residual of >50 ppm (at plate surface).
Temperature logs was available and up to date.
Basement area:
Walk-in cooler (beer/liquour) was at 4 deg C.
Walk-in cooler (food) was at 3-4 deg C.
Walk-in freezer was at -20 deg C or colder.
Dry storage area was in good condition (food items stored off the floor).
Staff washroom/change rooms were clean (liquid soap and paper towels provided).
Bar area:
Hand sink provided with liquid soap and paper towels.
Coolers were at 3-4 deg C.
Ice for drinking is kept separate on the ice bin.
No signs of pests noted at time of inspection. Pest control monitoring in place.
General sanitation was satisfactory at time of inspection.
Note:
Tiles to be done in November (some are cracked) and ceiling tiles also being addressed.
