Observation (CORRECTED DURING INSPECTION): Numerous dishes in kitchen noted as being re-used without proper dish washing. Instructed staff to wash dishes. All kitchen dishes should be properly washed and sanitized between every use.

Hot water is need for sanitation and proper handwashing. Have hot water tank repaired and providing an ample supply with proof.

Hand sinks must be equipped with paper towel, soap and hot + cold running water at all times and do not do food prepration in the back area.

Closure order is lifted: Premise has approval to operate.
1. Under counter cooler is repaired - 4°C.
2. Hot water appears to be sufficient at this time.
- Dishwasher was run constantly for 1/2 hour and still lots of hot water available at sinks at time of inspection.
- Dishwasher technician noted two issues with dishwasher (d/w) taht could have caused excessive hot water use; a broken pressure release valve was constantly leaking hot water, and a faulty drain valve was also leaking hot water. These were repaired.
3. Foods in walk-in cooler were re-arranged so that raw meats were on low shelves.
