209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
Take-out cup lids are placed in a bin which customers are now placing on their own drinks. Customers are unsure which lid fits on their cup and are handling multiple lids and putting them back into the bin. The lids are deemed "dirty" once a customer has touched it, and shall be discarded. Staff explained that they have ordered a lid dispensing unit to prevent this from happening.
Corrective Action(s):
Have staff ask customers if they would like a lid and have them place it on the cup for the customer, UNTIL the lid dispensing unit has been installed. Inform all staff of the temporary process.

304 - Premises not free of pests [s. 26(a)]
Observation:
Found a few mice droppings under sinks and along the base of walls in the back chemical storage areas. Mice and their droppings contain pathogens.
Corrective Action(s):
Immediately clean up the droppings, wash and sanitize all surfaces that came into contact with the droppings. Increase the frequency 'hard-to-reach' areas (along the base of all walls; under equipment and storage racks; under staff lockers; etc.) are cleaned.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The following pieces of equipment were found to be broken and/or not working as per manufacturer's specification. Food could be contaminated with small pieces of plastic, equipment is over worked, and/or it will attract and breed pests.
1) The 3-comp dishwashing faucet is constantly dripping cold water. The constantly dripping water will create a water source for mice and flies.
2) The u/c cooler, storing bottled drinks, door is not closing tightly. There is a gap that is letting cold air continuously leak out.
3) The automatic hot drink dispenser (French Vanilla, hot chocolate, etc) in the drive-thru area, has a broken drink tray rack being held together with zap straps.
Corrective Action(s):
1) Immediately call a person to repair or replace the faucet so the hot and cold water can be fully turned on and off.
2) Repair or replace the door so that it closes tightly and seals in cold air.
3) Immediately discard the broken drink tray rack, and order a new one. At time of inspection, the rack was discarded.

Comments

A routine inspection was conducted:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had rinse cycle temp of 73.3C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottle and cloth buckets had strength of 200ppm. Time written on buckets to remind staff when to change the solution.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins stored separately or below RTE foods; and foods stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use or food sale. FIFO rules being followed.
- General sanitation level is good, and improvement seen. Focus on hard to reach areas and detailed cleaning, as mentioned in the report. Ensure to remove all items off shelves and in cupboards to clean these surfaces; move equipment away from walls so the floor beneath, and the walls behind get a good scrub; and the walls behind and under sinks and prep tables are scrubbed clean.
- Exhaust canopy is clean, it was done in March 2023. Next professional cleaning is due in March 2024.
- No signs of pests.
- FS certified staff present, or those with an equivalent course.
- Staff wear gloves; hair nets and clean uniforms.
- Hand sanitizer available to staff and patrons.
- Process change occurring regarding staff not placing lids on cups for customers any more to be aligned with Provincial regulations related to single-use plastic items.
