Observation (CORRECTED DURING INSPECTION): (1) A bowl of calamari (squid) noted at 11.0 deg.C as per probe thermometre, next to undercounter cooler.
(2) One tray of ready-to-eat potato sauce noted at room temperature
Corrective Action(s): (1) Returned bowl of calamari (squid) back into the undercounter cooler because operator had explained it was brought out of the coller 40 minutes before inspection, during lunch rush.
(2) Operator voluntary discarded entire tray of potato sauce because it has been outside the cooler for more than 2 hours.

Observation (CORRECTED DURING INSPECTION): Packaged food items (calamari) noted thawing in the prep sink with tap off.
Corrective Action(s): Ensure food items are thawed Properly under cold running water or in the cooler at 4 deg.C or less.

Corrective Action(s): Ensure back door entrance is closed at all times to prevent pest entrance OR install screen door to have back door open during the summer time.

* All handsink stocked with liquid Soap, paper towel, hot/cold running water
* High temperature Dishwasher final rinse noted at 72.0 deg.C at plate level.
* Bleach bucket Solution noted at 100ppm Concentration
* Ice machine is in Sanitary Condition with scoop stored off ice.
* The following temperatures wre measured:-
- Walkin Cooler 1.0 deg.C
- Under Counter prep Cooler 4.0 deg.C
- Beverage Cooler at the bar 3.0 deg.C
- Chest freezer -21.0 deg.C
- Single door freezer -17.0 deg.C
- Hot holding for vegetable at 64 deg.C
* No signs of pest noted at the time of visit.
* Foodsafe certified staff onsite.
* Permit is posted in Conspicuous manner.
