Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Observation: Staff personal items (food, dishes, medication, vitamins etc) stored throughout premise together with food and food equipment for premise.
Margarine tray stored uncovered below service counter.
Open take-out containers stored right side up.
Corrective Action(s): Staff items are to be stored in a designated location separate and away from food and food equipment.
Food items / food containers when stored are to be properly covered to protect from contamination using fitted lids or single use plastic wrap / metal foil.
Ensure single use, take-out containers when removed from protective packaging are to stored upside down to protect from contamination.

Observation: Mouse droppings observed throughout premise - under, behind equipment, coolers and sinks.
Corrective Action(s): Premise sanitation must significantly improve and be maintained on a daily basis to discourage pest activity and provide a hygenic environment to prepare food.
Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.

Observation: Premise sanitation is poor. Corners, cabinets, shelves, and under / behind equipment have build-up of food debris and rodent droppings.
Interior of dough cooler has build -up of dust and mildew.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.
Protective packaging film is to be removed from all cabinets to allow for a cleanable surface.
