* Ensure that raw eggs are always stored on the bottom shelf of the cooler to prevent any cross contamination to dressings and prepared foods ( corrected).
* Ensure to monitor and record equipment temperatures, dishwasher sanitizer concentration and surface sanitizer concentrations at least once a day.
* Noticed some pallets of rodenticide bait underneath the dishwashing line. Do not use any chemical pesticides within the kitchen and food storage areas. In the event of
a pest problem, follow the advice of a licensed pest control company. The bait pallets were removed at the time of inspection.

Sliding door coolers below 4 degrees C.
Preparation cooler ( salsas and dressings) < 4 degrees C.
Raw poultry and meats prep cooler below 4 C.
Bar coolers maintained at 4 degrees C or below.
Upright freezer < -18 C.
Hot holding of chicken and refried beans > 60 C.
Dishwasher ( main): reached 100 ppm chlorine at the dish surface during final rinse.
Bar dishwasher: reached 73 C during final rinse cycle
Sink and surface sanitizer levels within acceptable range.
