Food Safe - operator has renewed her Food Safe certificate. One person per shift must have a valid Food Safe certificate.
Coolers - all coolers are at 4 C or colder with the exception of small reach in cooler near the hand sink (5.8 C) which is for lower risk foods such as canned drinks only.
Eggs: are fully cooked before serving. Pool eggs only just before they are cooked.
No hot holding of foods during inspection.
Unscented domestic bleach is used to sanitize wiping cloths, counters, and food contact surfaces. Sanitize frequently (every 2 - 4 hours).
Use 1 tsp bleach in 1 litre water to make 100-200ppm sanitizing solution.
Dishwasher - final hot water sanitizing rinse water temperature is 92 C (gauge) and 71 C measured inside of the machine.
Maintain the dishwasher as directed by the manufacturer. Note that City water does have minerals in it.
Clean under dishwashing sinks and floor in hard to reach areas.
