301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Cabinet surfaces, food prep surfaces, walls, walk in cooler walls, outside of buckets, oven surface, and various other surfaces have brown, black food residue or dried on red tomato sauce, old and new.
Corrective Action(s): All surfaces, especially food prep surfaces need to be cleaned and sanitized and maintained at least visibly clean.
Clean spills up immediately when they happen and at end of night.
