401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing sink was inaccessible/obstructed, as it was being used to store a colander for straining vegetables (bell peppers), a sanitizer pail, used knives and a small cutting board.
Corrective Action(s): Staff cleared the hand sink at time of inspection. This sink must only be used for hand washing, and must be accessible and unobstructed at all times.

Observation (CORRECTED DURING INSPECTION): A small hose was attached to the dipper well faucet, creating a connection between the faucet and the water in the dipper well. This can cause potential backflow of contaminated water from the dipper well/drain pipe into the faucet and potable water system.
Corrective Action(s): Hose was detached at time of inspection. An air-gap must always be present between a sink/dipper well faucet and the sink.

Comments

- Hand sink was supplied with hot and cold running water, liquid soap, and paper towels. *Ensure it is always accessible and unobstructed for hand washing (see violation code 401 above).
- Quat sanitizer measured at 200 ppm in sanitizing sink and from dispensing unit.
- Three-compartment sink available for manual warewashing and was properly set up at time of inspection. Sink drain plugs available and in use.
- Dish drying racks maintained in sanitary conditions
- All coolers were measured at 4C or colder. All freezers were measured at -18C or colder.
- Yogurt held in ice measured at 2C. Good.
- All equipment maintained in sanitary conditions.
- Food storage practices satisfactory.
- General sanitation satisfactory at time of inspection
- No signs of pest activity noted at time of inspection

*Note: One employee onsite will be writing FoodSafe level 1 exam on June 15th, as her previous certification had expired.
Reminder that in the operator's absence, at least one employee onsite must have their FoodSafe level 1 certification.
