Routine > Operator provides catering services for private events. > Membership with YVR prep is hourly. Workstation is assigned upon booking. > Membership includes designated dry storage and refrigerated storage space - both of which are clearly labelled. > Minimal food items are stored on site. Operator purchases perishable ingredients just prior to using the space. > No changes to transportation and delivery methods since last routine - food is delivered in cambro units or insulated boxes and delivery radius remains within 30 minutes from the YVR Prep kitchen. > Handsinks are fully supplied with hot and cold water, liquid soap and paper towels. > Walk-in cooler: 1C > High temperature dishwasher had final rinse temperature of 72.8C as per max/min thermometer. > Most equipment, dishes and utensils are rented and returned to a third party company. Minimal warewashing takes place in the commissary kitchen. > 200ppm QUATS sanitizer available for food contact surfaces. > Operator has QUATS test strips. > Operator has valid foodsafe level 1.
