Observation: Dishwasher final rinse temperature registered 67.8 C, 69 C and 66 C after three runs. Final rinse temperature is inadequte for sanitizing of glasses and dishes.
Corrective Action(s): Repair or replace the dishwasher so that it is capable of reaching at least 71 C at the dish surface during final sanitizing rinse.
The booster must heat the water to a minimum of 82 C at the manifold. Untill then all glasses and basket must be sanitized manually by soaking in 200 ppm quats sanitizer. (immediately)

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (Temperature of hot water was inconsistent when checked at the hand sink and triple wash sink. Hot water tested 35C and then cooled down to 24 degrees C within a few seconds.)
Comments

* Ensure to repair the hot water issues at the spray sink near the dishwasher ( By May 27, 2018)
Hot water at the double wash sink registered 47 degrees C at the time of inspection.
The floor underneath the syrup storage has been cleaned.
Please inform the undersigned once the dishwasher has been repaired. A new thermometer capable of recording max. temperature during sanitizing or Thermal strips
must be purchased for monitoring the high temperature dishwasher.
