All temperatures of fridges are 4 degrees Celsius or colder.
Freezer is -18 degrees Celsius or colder.
Dishwasher final rinse reached 78 degrees Celsius at the plate surface.
Quat sanitizer has a 200 PPM residual in the sanitizer buckets.
Two sinks in the front service area at opposites ends have been designated as hand washing sinks only. This is considered acceptable since they are conveniently located for all staff in the front area.
