302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: 1)Dishes are not being washed properly. Dishes must be washed with soap in the 1st sink, then sanitized in the 2nd sink before being airdried. 2) Sink plugs are missing. 3) Not all sanitizer spray bottles had the appropriate concentration of bleach. Corrective Action(s): 1) Start washing dishes as discussed. Follow your Sanitation plan. 2) Purchase some sink plugs to enable dishwashing. This was brought up in a previous inspection as well. 3) Ensure that all sanitizer spray bottles have 100-200ppm bleach solution in them. Violation Score: 15

Comments

General Comments: All coolers are below 4 degC Freezers are below -18 degC Pizzas are held for 1.5 hours in the warmer then discarded. Each of pizzas in the hot holding unit was time stamped. Handsinks and washroom sink are fully equipped. Manager on duty had a valid Foodsafe Certificate. Report reviewed, not signed. FOLLOW-UP TO BE CONDUCTED NEXT MONDAY.
