Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was not prepared at the time of inspection.
Corrective Action(s): Prepare 100-200 ppm bleach sanitizer. Ensure it is available while kitchen is in operation.

Observation: Heavy accumulation of food debris observed between deep fryers and underneath prep table next to the walk-in cooler. Old rodent droppings observed on the floors along the walls in the kitchen as well as on dry storage shelving in the back area.
Corrective Action(s): Clean all noted areas. Sanitize areas affected by rodent droppings with bleach sanitizer. Ensure cleaning is done regularly to avoid accumulation of food debris. Correct within 1 week.

Observation: Walk-in cooler was maintaining ambient temperatures of 13-14C.
Corrective Action(s): Repair walk-in cooler so it is able to maintain 4C or less. Do not store any perishable foods in this cooler. Correct as soon as possible.

Note:
- Restaurant is currently take-out only. Operator currently following manual dishwashing method for two compartment sinks.
- Hand washing station has not been repaired. Cold water is not available. Plumber has been by to service the washroom and will be looking at the hand washing station next.
- Maintain temperature logs for all coolers at least twice per day.
