Prep cooler across cooking line (closest to walk in cooler) has now been repaired. Ambient air temperature in inserts was at 4 deg C (probed to be at 2.3 deg C) and bottom compartment was at 3 deg C. Ensure to keep prep cooler lid shut during less busy times/when cooler not in use. Thank you.
